Hot Paprika Schnitzel - Disney Recipes at Home!

The Biergarten Restaurant at Epcot gives one the traditional German Biergarten experience - long, communal tables where you sit and make friends with strangers, giant mugs of wonderful German beer, and unlimited quantities of German specialties.

On my last trip to the Biergarten at Epcot, they had a new item I'd never tried before featured: schnitzel with a hot paprika sauce. I knew I absolutely had to try to make this recipe at home, but I could not procure the official Disney recipe. What I managed to do, however, was piece together just what was in the gravy, and with a few modifications to another recipe I found on the website Bavarian Kitchen, I managed to make this lovely, slightly spicy dish at home! So, let's not waste any more time!




Yield:

4 servings

Ingredients

  1. 4 pork loin chops/chicken breast cutlets/veal cutlets
  2. 4 tablespoons oil for frying
  3. 1 cup flour
  4. 1 egg
  5. 1/2 tablespoon milk
  6. 1 cup Italian style breadcrumbs
  7. 1 red pepper
  8. 1 medium onion - diced
  9. 1/2 tablespoon flour
  10. 1/4 cup sour cream
  11. 1/4 cup beef broth
  12. 2 tablespoons hot Hungarian paprika (or 1 tablespoon smoked paprika and 1 tablespoon Chipotle pepper powder)
  13. Salt and pepper to taste

TIP: Measure out your ingredients before you start and set them aside, that way you don't end up measuring while you cook, which can lead to disasters.

Directions

1. Set broiler to high.



2. Place red pepper directly on rack in middle of oven, with aluminum foil on the rack below to catch any drippings.

3. Turn pepper every 2-3 minutes for 20 minutes.

4. Remove pepper from oven and place in a heatproof bowl.

5. Let pepper sit, covered with plastic wrap, for 30 min. Remove stem, seeds, and internal membranes. Slice into thin strips.

6. If meat is not already sliced thinly, use a mallet to pound it to a uniform thickness.



7. Coat meat in flour, shaking off excess.

8. Coat meat in egg/milk mixture, letting excess drip off.

9. Coat meat in breadcrumbs, shaking off excess.

10. Bring oil to medium temperature in a large frying pan.



11. Fry breaded meat (schnitzel) for about five minutes on each side, or until golden brown.



12. Remove schnitzel from heat, placing on paper towels to dry.



13. Stir onions into the oil from the meat - add a little oil if necessary, but not too much.

14. Saute onions until tender.

15. Dust with 1/2 tablespoon flour.



16, Add paprika, broth, and roasted red pepper.

17. Cook for five minutes or until sauce has thickened.



18. Add sour cream.

19. Remove from heat once sour cream has been stirred into sauce.

20. Plate schnitzel, spoon sauce on top.

Artist Point at Disney's Wilderness Lodge gives diners the feeling of enjoying modern American cuisine in a comfortable, Pacific Northwest inspired dining room.  With a frequently rotating menu (both seasonally and at the chef's whim), it can be a bit difficult to nab a recipe while they're still serving an item, but there are a few items that have stood the test of time.

One such item is the cedar plank salmon - a beautiful piece of Wild King salmon cooked with a maple-whiskey blend to add a subtle sweetness to the smoky flavor that develops from the cedar planks.  If you are a seafood lover, especially one who enjoys that classic, rugged Pacific Northwest flavor, this is definitely a recipe you are going to want to try at home for yourself.


Cedar Plank Salmon Ingredients

 Yield:

4 servings

Ingredients

  1. 1 pound Wild King salmon fillet
  2. 2 ounces walnut oil
  3. 2 ounces maple syrup
  4. 2 ounces whiskey
  5. 4 sprigs rosemary
  6. 4 sprigs thyme
  7. Either 4 cedar planks or one large cedar plank, enough to fit the entire filet on

Directions

1. Preheat oven to 400° F

2. Brush cedar board(s) with walnut oil.

3. Heat cedar board in preheated oven for 15 minutes.


Maple Syrup Whiskey Blend

4. While cedar boards heat, mix together maple syrup and whiskey.


Salmon Portions

5. Divide your salmon into portions, if not cooking whole.

6. Remove cedar boards from oven.

7. Place salmon on cedar boards.

8. Place a spring each of rosemary and thyme on each serving of salmon.


Maple Whiskey Drizzle on Salmon

9. Drizzle maple whiskey mixture over salmon.

10. Cook in 400° F oven for 20-25 minutes.

Cottage pie is a classic item in British cuisine, appearing in cookbooks as early as the 18th century, as potatoes were first starting to appear as an affordable item for rural workers.  Of course, the dining room at Epcot's Rose and Crown had to include this authentic fare on their menu, and we decided to share the magical Disney version of this recipe here.

Now, we took a few shortcuts with our cottage pie, using packaged gravy (feel free to make your own gravy or use jarred gravy, it you prefer) and pre-made mashed potatoes.  Of course, making everything from scratch will be a bit better tasting, but for those in a hurry, this version of the recipe will work just fine.

Yield:

4-6 servings 

Ingredients

  1. 1/4 cup butter
  2. 1 cup diced onion
  3. 1 cup diced carrot
  4. 1 cup green peas*
  5. 1 1/2 pounds lean ground beef
  6. Salt and freshly ground pepper to taste
  7. 1/4 teaspoon ground savory**
  8. 1 cup brown gravy
  9. 2 cups mashed potatoes
  10. Additional butter
*I added these, as I like peas in my cottage pie.  Leave 'em out if you want the 100% authentic Disney experience.
**If you can't find savory at your local store, sage or thyme make a good substitute.  We used thyme for ours and it came out just fine.

Directions



1. Dice your onions and carrots, setting them aside for later.


2. Heat 1/4 cup of butter in a nine inch skillet.  Make sure your skillet is large enough, as you will be putting quite a bit in it, and you want to make sure you have enough room for all of your ingredients to cook evenly.



3. Add your diced onions and cook until they are lightly browned, stirring frequently.


4. Add beef, salt, pepper, and savory, cooking until the meat is browned.


5. Add gravy and stir well, continue cooking until the gravy is bubbling.  You may want to incorporate your carrots now, if you'd like them to soften up a bit before baking.


6. Spoon the mixture into an 8-cup, flat casserole dish.


7. Spread the meat mixture out evenly.


8. Add your peas and carrots, if you didn't add them in the previous step.


9. Spread your mashed potatoes evenly over the top, covered all of the meat and vegetables thoroughly.


10. I still see some peas and carrots peeking through there....


11. Much better!  Now, dot the top with butter.


12. Bake in oven preheated to 400° for 20 minutes, or until browned on top.


13. Let sit for about five minutes, or, at least, as long as you can hold out without eating it...
