The Biergarten Restaurant at Epcot gives one the traditional German Biergarten experience - long, communal tables where you sit and make friends with strangers, giant mugs of wonderful German beer, and unlimited quantities of German specialties.

On my last trip to the Biergarten at Epcot, they had a new item I'd never tried before featured: schnitzel with a hot paprika sauce. I knew I absolutely had to try to make this recipe at home, but I could not procure the official Disney recipe. What I managed to do, however, was piece together just what was in the gravy, and with a few modifications to another recipe I found on the website Bavarian Kitchen, I managed to make this lovely, slightly spicy dish at home! So, let's not waste any more time!

Ingredients

  1. 4 pork loin chops/chicken breast cutlets/veal cutlets
  2. 4 tablespoons oil for frying
  3. 1 cup flour
  4. 1 egg
  5. 1/2 tablespoon milk
  6. 1 cup Italian style breadcrumbs
  7. 1 red pepper
  8. 1 medium onion - diced
  9. 1/2 tablespoon flour
  10. 1/4 cup sour cream
  11. 1/4 cup beef broth
  12. 2 tablespoons hot Hungarian paprika (or 1 tablespoon smoked paprika and 1 tablespoon Chipotle pepper powder)
  13. Salt and pepper to taste

TIP: Measure out your ingredients before you start and set them aside, that way you don't end up measuring while you cook, which can lead to disasters.

Directions

1. Set broiler to high.



2. Place red pepper directly on rack in middle of oven, with aluminum foil on the rack below to catch any drippings.

3. Turn pepper every 2-3 minutes for 20 minutes.

4. Remove pepper from oven and place in a heatproof bowl.

5. Let pepper sit, covered with plastic wrap, for 30 min. Remove stem, seeds, and internal membranes. Slice into thin strips.

6. If meat is not already sliced thinly, use a mallet to pound it to a uniform thickness.



7. Coat meat in flour, shaking off excess.

8. Coat meat in egg/milk mixture, letting excess drip off.

9. Coat meat in breadcrumbs, shaking off excess.

10. Bring oil to medium temperature in a large frying pan.



11. Fry breaded meat (schnitzel) for about five minutes on each side, or until golden brown.



12. Remove schnitzel from heat, placing on paper towels to dry.



13. Stir onions into the oil from the meat - add a little oil if necessary, but not too much.

14. Saute onions until tender.

15. Dust with 1/2 tablespoon flour.



16, Add paprika, broth, and roasted red pepper.

17. Cook for five minutes or until sauce has thickened.



18. Add sour cream.

19. Remove from heat once sour cream has been stirred into sauce.

20. Plate schnitzel, spoon sauce on top.

Just stepping in to the BoardWalk Bakery at Disney's BoardWalk Inn is enough to overwhelm your senses, with all sorts of beautiful, tantalizing treats sitting right there in the glass case, waiting to be eaten.  The sweet smells that fill the air: sugar, flour, chocolate, spices, all tempting you closer, wanting to to try those amazing wares.

One of the most popular items at the BoardWalk Bakery (and after I type the name, I am certain you will understand why) is their famous cheesecake brownies.  Of course, after reading that, I know you are just chomping at the bit to make them at home for yourself, so let's not waste any more time!



Yield:

About 12-14 servings

Brownie Ingredients

  1. 2 cups sugar
  2. 1 1/4 cups all purpose flour
  3. 2/3 cup cocoa powder
  4. 1 1/2 teaspoons salt
  5. 1/2 teaspoon baking powder
  6. 5 eggs
  7. 2 sticks of butter - melted
  8. 1/2 cup semi-sweet chocolate chips

Cheesecake Ingredients

  1. 3/4 cup sugar
  2. 3 tablespoons corn starch
  3. 4 eight-ounce boxes cream cheese
  4. 1 tablespoon lemon juice
  5. 2 tablespoons vanilla extract
  6. 2 eggs
  7. 2 tablespoons heavy cream
  8. 2 tablespoons sour cream
  9. Chocolate sauce (optional)

Directions


1. Preheat oven to 350° F

2. Grease a 13" x 9" baking pan.

3. Sift together flour, cocoa powder, salt, and baking powder.



4. Beat flour mixture and eggs until smooth.

5. Slowly add melted butter.



6. Mix until smooth - do not overmix.



7. Fold in chocolate chips.



8. Transfer batter into baking dish.

9. Bake until a toothpick comes out clean when inserted into the center of the brownies.

10. Let cool completely.

11. After brownies cool completely, preheat oven to 325° F.



12. Cream sugar, cornstarch, and cream cheese.



13. Add lemon juice and vanilla extract.

14. Mix until combined.



15. Add eggs one at a time, scraping sides of bowl after each.

16. Fold in heavy cream and sour cream.



17. Pour cheesecake batter on top of now-cooled brownies, spreading the batter until completely covering brownies, with a smooth surface.

18. Bake 55-60 minutes, or until the edges of the cheesecake are slightly browned.

19. Allow to cool on a wire rack.

20. Cool in refrigerator overnight for best results before serving.



22, Decorate with chocolate sauce, if desired.

1900 Park Fare is meant to recall the elegance of the Victorian era, with a menu that spans a variety of cuisines that even Victoria herself would be proud to consider part of her Empire.  One of the most popular dishes is an item that could be taken either as a soup or a dessert (or perhaps both?): Strawberry Soup.  This rich and creamy dessert is actually ridiculously easy to make, if you have a blender on hand (I tossed it in my trusty Blendtec and it was a snap.)

Seeing as it's strawberry season here in Florida, it was the perfect time to grab the fresh strawberries used for garnish, but the soup itself calls for frozen strawberries, which you can, of course, find year round!




Yield:

About 4-6 servings

Ingredients

  1. 2.5 pounds frozen strawberries (thawed, with juice)
  2. 16 ounces heavy cream
  3. 2 ounces sour cream
  4. 3 ounces plain yogurt
  5. Sugar, to taste
  6. 8 ounces fresh strawberries
  7. 1 cup whole milk
  8. 2 eggs
  9. Non-stick cooking spray

Directions


1. Place thawed strawberries with juice, heavy cream, sour cream, and yogurt in blender.

                      

2. Start blender low, and gradually increase speed, until at a medium speed.

3. Blend until you have a smooth, uniform product.

4. Taste - if your strawberries were not sweet enough, you will need to add sugar.  I did so 1/4 cup at a time until I reached the sweetness I desired. (It took about 1/2 cup, your mileage may vary depending on your berries.)

5. Chill for 30-60 minutes.

6.  Slice fresh strawberries.

7. Pour soup into a bowl and garnish with strawberry slices.

On my recent trip to the Hoop-Dee-Doo-Musical Revue, Tabby was given the recipe to make the famous Hoop-Dee-Doo Cornbread at home.  This cornbread may not bring all of the knee-slappin', hootin' and hollerin' hootenanny fun to your home, but it will definitely get you a good start!  At the very least, it's extremely tasty with some butter alongside any homestyle food you might want to have for dinner!


Yield:

About 8-10 servings

Ingredients

  1. 3/4 cup cornmeal
  2. 1 1/4 cup sugar
  3. 1 tablespoon baking powder
  4. 1 1/2 teaspoon salt
  5. 1 3/4 cup all purpose flour
  6. 1/2 cup vegetable oil
  7. 1 cup whole milk
  8. 2 eggs
  9. Non-stick cooking spray

Directions

1. Preheat oven to 375 degrees Fahrenheit.

2. Combine dry ingredients together in a large mixing bowl.



3. In a separate mixing bowl, combine the wet ingredients.



4. Blend wet ingredients together.



5.  Slowly incorporate the wet ingredients into the dry ingredients.


6. Mix until combined to a batter.



6. Spray a 9x13 baking pan with non-stick baking spray. (You'll note that I used a loaf pan rather than a 9x13.  This caused a bit of batter overflow, but still worked fairly well - I recommend using the 9x13, however).



7.  Spread cornbread batter evenly across the pan. (If you decide to use a loaf pan, as I did, be sure to give yourself about 1/2-3/4 inch between the top of your batter and the lip of the pan, or else your cornbread will begin to take on a life of its own and overflow.)

8.  Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center of the cornbread comes out clean.



9. Allow to cool slightly.

10. Turn cornbread out from pan.

8. Spread with your favorite butter (or other topping, or just by itself!)

With autumn and Epcot's International Food and Wine Festival upon us, I felt that it was time to bring in an old favorite of mine.  Whether you're enjoying it around the Promenade or in the more secluded (and almost impossible to book) comfort of Le Cellier, the result is the same.  That's right, I'd talking about the delicious culinary miracle that is Canadian Cheddar Cheese Soup.

This is a combination of the holy trinity - beer, cheese, and bacon, in a warming, delicious bowl that'll certainly keep you warm as the nights grow more chilly.  This recipe is actually fairly simple - just don't ever forget to stop stirring, as this is a soup that will burn extremely easy if you do so.

About 10 servings

Ingredients

  1. 1/2 pound bacon - cut into 1/2 inch pieces
  2. 4 tablespoons butter
  3. 1 medium red onion - diced
  4. 3 stalks celery - diced
  5. 1 cup all purpose flour
  6. 3 cups chicken stock
  7. 4 cups whole milk
  8. 1 pound grated white sharp cheddar cheese (Canadian Black Diamond used at Disney)
  9. 1 tablespoon Worcestershire sauce
  10. 1 tablespoon Tabasco sauce
  11. 1 cup warm lager (Moosehead used at Disney)
  12. Salt & pepper to taste

Directions

1. Place bacon in a large stock pot over medium heat.



2. Cook until bacon begins to brown (About five minutes).

3. Add butter.

4. Add celery and onion.

5. Cook until celery and onion have softened and become translucent (About five minutes).



6. Stir in flour slowly until incorporated (about four minutes).


7. Slowly add chicken stock, constantly stirring.  This mixture will be quite thick still.

8. Let boil for 1 minute.

9. Reduce to simmer for 15 minutes.

8. Slowly add milk, continuing to stir.



9. Let simmer, but do not allow to boil, for about 15 minutes.

9. Remove from heat.

10. Add cheese and stir until it has completely melted.

11. Add Tabasco and Worcestershire and stir.

12. Add beer, stirring until incorporated.  (If the soup is too thick at this point, add some warm milk)

13. Ladle out into bowls while still hot.

14. Top with chopped bacon and/or chives for garnish.

Oktoberfest is upon us, and with it, cravings for delicious German food!  Of course, there are many different items available to snack on at the German Pavilion in Epcot, whether you venture into the all-you-care-to-enjoy experience that is the Biergarten, or if you just hit one of the shops outside and grab yourself a beer and pretzel.

Speaking of pretzels, I find the Germany Pavilion soft pretzels to be the absolute best in the park.  That's right, something that trumps a similar item that is Mickey shaped (I know, it sounds crazy, but it's true).  So, with my love for these pretzels, I knew I just had to get the recipe to try to make them at home.  On a side note, if you happen to like mustard sauce, I made this non-Disney mustard sauce from Alton Brown to compliment my pretzels!

I have seen other allegedly Disney pretzel recipes, and, in fact, followed one that didn't have the baking soda boiling step.  This step is essential to making the pretzels have the proper consistency and color.  If you skip the boil, your pretzels will come out tasting fine, but looking like this:



Grab a beer, make some pretzels, and turn up that polka music!  Prost!



Yield:

About 10 pretzels

Ingredients

  1. 1 package active dry yeast
  2. 1 1/2 cups warm water
  3. 1 teaspoon sugar
  4. 1 teaspoon salt
  5. 4 cups all purpose flour
  6. 2 eggs
  7. 2 tablespoons water
  8. Coarse salt
  9. 2/3 cup baking soda
  10. 10 cups water

Directions


1. Preheat oven to 400 degrees F.

2. Place yeast in bowl with warm water. Stir until yeast dissolves.


3. Stir in salt, sugar, and two cups of flour.

4. Beat mixture until smooth.

This can be done with hands, but it is much easier with a blender.
5. Stir in remaining flour until mixture has a dough-like consistency.

6. Turn dough onto a lightly floured surface.

7. Knead dough until elastic (this should take around 5 minutes)


8. Cut dough into 3 ounce pieces.


9. Roll each piece into a ball.

10. Let dough rest for 10 minutes.

11. Roll dough out into thin ropes about 20 inches long.

12. Turn rope so it makes a U shape.



13. Place one end of the rope just to the side of the center, pressing firmly.



14. Repeat with the other side, pressing firmly on all intersecting points.



15. Let pretzel proof on a baking sheet until doubled in thickness.

16. Bring baking soda and 10 cups of water to a boil.

17. Place pretzels, one at a time, into boiling water for about 30 seconds, removing with a flat slotted spatula or slotted spoon.



18. Place pretzels on a cookie sheet.

19. Whisk eggs with 2 tablespoons water.

20. Brush egg wash over pretzels once they have proofed.



21. Sprinkle with coarse salt to desired amount.

22. Place baking sheet in oven and back for 10-12 minutes, or until golden brown.

23. Spread with or dip in mustard (or any sauce you happen to like on your pretzels).


24. Enjoy!
