Ginger Carrot Soup

Boma is an African term for an enclosure - a safe place.  This buffet at Disney's Animal Kingdom Lodge gives one the feeling of dining in an enclosure, like a fence around a house, while making ventures out to the local marketplace to pick up your food for your meal.  The sights and smells of this place are absolutely outstanding.  The flavors of Boma are what really shine.

One of the most popular items on the buffet is the ginger carrot soup.  This creamy concoction is full of flavor, bursting with sweet carrot flavor, with a bit of warmth from the ginger that slowly sneaks up on you as you eat.  Although the flavors of Boma are varied and exotic, it's actually not too hard to experience them in your own kitchen, so let's get started!

Ingredients

  1. 1 pound carrots
  2. 1/2 ounce ground fresh ginger
  3. 2 cups water
  4. 2 ounces sugar
  5. 2 ounces American cheese (shredded)
  6. 2 cups heavy cream
  7. 2 ounces flour
  8. 2 ounces butter

Directions

1. Cut carrots into chunks (about the size of baby carrots).



2. Grate ginger.  If you like your soup with a little bit of a bite, you may want to grate a little extra ginger beyond the two ounces.



3. Put carrots, ginger, water, and sugar into large pot.

4. Simmer carrots until soft.



5. While carrots are simmering, melt butter in a small saucepan.

6. Slowly incorporate flour into butter, whisking to combine.



7. Do this until you have a pale roux the consistency of paste.  Set aside.



8. With a blender, puree carrots (including water) until smooth.

9. Put the carrot puree back into pot over medium heat.

10. Mix in heavy cream and milk.

11. Stir in roux until fully incorporated.



12. Mix in American cheese until melted and soup has creamy consistency.
