Artist Point at Disney's Wilderness Lodge gives diners the feeling of enjoying modern American cuisine in a comfortable, Pacific Northwest inspired dining room.  With a frequently rotating menu (both seasonally and at the chef's whim), it can be a bit difficult to nab a recipe while they're still serving an item, but there are a few items that have stood the test of time.

One such item is the cedar plank salmon - a beautiful piece of Wild King salmon cooked with a maple-whiskey blend to add a subtle sweetness to the smoky flavor that develops from the cedar planks.  If you are a seafood lover, especially one who enjoys that classic, rugged Pacific Northwest flavor, this is definitely a recipe you are going to want to try at home for yourself.


Cedar Plank Salmon Ingredients

 Yield:

4 servings

Ingredients

  1. 1 pound Wild King salmon fillet
  2. 2 ounces walnut oil
  3. 2 ounces maple syrup
  4. 2 ounces whiskey
  5. 4 sprigs rosemary
  6. 4 sprigs thyme
  7. Either 4 cedar planks or one large cedar plank, enough to fit the entire filet on

Directions

1. Preheat oven to 400° F


Preparing Cedar Planks for Salmon

2. Brush cedar board(s) with walnut oil.

3. Heat cedar board in preheated oven for 15 minutes.


Maple Syrup Whiskey Blend

4. While cedar boards heat, mix together maple syrup and whiskey.


Salmon Portions

5. Divide your salmon into portions, if not cooking whole.

6. Remove cedar boards from oven.

7. Place salmon on cedar boards.

8. Place a spring each of rosemary and thyme on each serving of salmon.


Maple Whiskey Drizzle on Salmon

9. Drizzle maple whiskey mixture over salmon.

10. Cook in 400° F oven for 20-25 minutes.
